Customers are ever more aware of the importance of eating well. Glastonbury Ferments was founded by husband and wife team John and Annie King in 2017 to realise the opportunities of the massive healthy eating trend in our society. It became apparent that people like Dr Michael Mosley of the BBCs Trust me Im a doctor series and other ambassadors of healthy eating were having a big impact on peoples awareness of the importance of gut health. In his TV shows, books and radio Dr Mosley talks about the importance of eating more prebiotic and probiotic foods, such as sauerkraut. As a result of all this publicity, awareness of fermented foods is huge. There is also a massive rise in vegan and free-from-gluten/dairy eating trends, which sauerkraut naturally fits. Sauerkraut is a super low calorie, fat and sugar free, vegan, incredibly tasty and superbly heathy food. John and Annie developed a range of live fermented sauerkrauts such as Kimchi, Korean style sauerkraut, Curtido, South American style sauerkraut and the ever popular classic sauerkraut amongst others. The canvas for creating other vibrant flavours and colours of sauerkrauts is literally unlimited.
Taking this range of products to farmers markets seemed an obvious route for John and Annie so they developed a tailor made market stand, quite different from the usual trestle table. With its eye catching display they went to Bath Farmers Market in Green Park Station and with samples for customers to taste were delighted to see how many people knew and wanted the live, raw, probiotic foods on offer. It was a complete success.
Securing a pitch can be nigh impossible at these markets but John and Annie discovered that since no one else was providing these products and customer awareness and demand was high market operators quickly realised they needed to make space for Glastonbury Ferments. As well as Bath, Glastonbury Ferments also has pitches including Bristol with many other operators requesting us to attend their market. In fact we have more markets wanting us than we can currently attend. We have also attended vegan fairs to great success and have a number of festivals booked for the months ahead. Why a Sauerkraut business is such a good opportunity.
Markets are in themselves sought after locations for the sole trader due their inherent profitability but developing a business idea that will work is hard, and getting a pitch even harder. Sauerkrauts are ideally suited to markets and festivals and to expansion to local retail and farm shops. Organisers are always looking for new innovative offers to keep their markets fresh and relevant. Fermented foods such as sauerkrauts and kimchi are hugely attractive to organisers and they have gone out of their way to give us space. A sauerkraut business is unlikely to have any competition at markets and or festivals.Cash business, minimal working capital required, no previous experience necessary. Relevant product for our time health conscious consumers looking for these products. Wide public awareness driven by doctors and health commentators like Dr Michael Mosley and even the Archers on Radio 4. Business in a box, proven sales success, complete business model, recipes and production process, immediate revenue. No cooking, no smells, no wasted product, no meat handled, no chiller required.

Very high profit margins, sauerkrauts are cheap to produce and fetch premium prices. Full training in production and sales. This is because it is far cheaper, easier, less risky and quicker to adopt an already successful formula, than to invent and develop your own. So if youre reading about this opportunity whats stopping you grabbing a book, reading about how to make sauerkraut and hey presto you have a business. The answer in reality is a great deal.We started with years of fermenting experience already behind us but even with that it took some months to develop processes and develop recipes so that we could successfully make in large quantities with flavours that were popular with customers. We needed local authority registration as a food business, and a documentation system that would pass inspection, yet more work, more time. Then we needed a market stand, we concluded early on a trestle table with a cloth just wouldnt cut it we needed to look different so we developed two stand designs and they have worked well and proven themselves. Next you need signage, labels, website etc.
This meant design and artwork had to be done, a website created, labels printed etc. So you can see that there is a surprising amount to do and this is far from an exhaustive list. Production of products for sale. All products are made at home in a domestic kitchen.
